  1. I think a really good restaurant is when they are consistently good. I’ve been to any number of places that I’ve enjoyed one time, only to go back and be disappointed later by the same meal.

  2. A really good restaurant keeps surprising me with excellence.  I’ll even go along with surprises I don’t much care for if they’re imaginative about it (and don’t overwhelm me with them).
