My wife’s father and brother were both professional bakers and capable of making a great non-dairy filling (suitable for those who keep kosher and want an eclair after a meat meal).
Alas, my brother-in-law passed away 2 years ago and my father-in-law last October.
Hungarian bakers take their pastries VERY seriously.
